For regular food, eating vegan is not that big of a deal. When it comes to desserts, though, vegan choices can be sorely lacking. You would think ordering a dessert from a specialty vegan restaurant would be passable, if not good. Yet I have felt disappointed, dejected even, from seriously bad vegan desserts.

Make as per the strawberry milk ice cream recipe. Use raspberry flavor and raspberries instead of strawberry flavor and strawberries. Press the mashed raspberries through a sieve to remove the seeds.

Combine sugar, flour and salt in a saucepan. Slowly stir in hot milk. Cook over low heat for about 10 minutes, stirring constantly until mixture is thickened. Mix small amount of hot mixture into beaten eggs. Add to hot mixture and cook 1 minute longer. Chill in refrigerator. Add cream and vanilla. Pour into gallon freezer. Churn for about 15 minutes or until it has frozen to a mushy consistency. Add 1 1/2 cups crushed peppermint stick candy and continue freezing as directed.

Next I add 1-1/2-cups of light-colored honey to the scalded cream and chill it. When it is chilled I add 2 more quarts of cream and put it into the ice cream freezer. I add my wild strawberries to the ice cream when it just starts to harden in the maker. I use 5-cups of berries for a gallon of ice cream. Wild strawberries have more intense flavor than tame ones. I crush them and drizzle a little honey over them and let them mascerate for a few hours before putting them in the ice cream.

Another difference is the sugars. Any dairy-based ice cream product will contain 16 to 24 percent sugar. Most American ice creams, on the other hand, contain 12 to 16 percent sugar. However, keep in mind that most of this sugar comes from the natural source of fresh fruit rather than from a flavoring added to it.

So how did it all start? If you can believe it Ben & Jerry's was actually started by a couple of ex-hippie friends Ben Cohen and Jerry Greenfield in Burlington, Vermont. The two friends had recently taken a correspondence course that they paid $5 for on ice cream from Pennsylvania State University. Their first location was opened in a renovated gas station in 1978 with a $12,000 investment.

Remove mold and add your second flavor (we'll say chocolate.) Do the same with the second flavor as the first. Once the mold is full, remove the inner portion and return it to the carton, leaving a second shell of chocolate inside the strawberry. Return mold to freezer for another forty-five minutes.

All in all, I think it comes down to training yourself to eat healthy. Eating salads is not always the tastiest option, but they really aren't that bad. However, people have it programmed in their heads that salads are boring, which is so far from the truth. If you are able put yourself in the right mindset, a bowl of sugar free ice cream can be the treat that fulfils your sweet tooth whenever the craving comes up.
